Chopped Cobb Salad
This recipe is everything you love in a Cobb salad, without the salad greens. Don't get me wrong, I love a good leafy green salad, but this just works! It's nice and filling, and very delicious. Be mindful that avocados are not really low carb, each one has around 20 grams. I eat half of the salad typically so it's 10 with that one ingredient.
Chopped Cobb Salad Recipe
1 Avocado, chopped
2 hard boiled eggs, chopped
4 strips bacon, cooked
1 small cucumber, chopped
Sliced green or red onion
1-2 Tbsp. Bleu cheese, crumbled
1 tomato, chopped
1/4-1/2 c. Chicken breast, chopped
2-3 Tbsp. Ranch dressing
Toss everything to combine.
