Breakfast Sausage and Pepper Bowl

 

     I love a hearty breakfast bowl. Sausages, eggs, cheese, they are all delicious. I wanted a bit of texture in there so I cooked the peppers crisp-tender so they weren't another soft ingredient. 

Sausage Breakfast Bowl
1 sausage patty
1/2 bell pepper, chopped
2 eggs
2 slices cheese, I used Havarti
1/2 avocado, cubed
salt and pepper to taste
Dash granulated garlic

Cook the sausage in a pan over medium-high heat to sear on both sides. Remove from the pan, chop and set aside.  Add the bell pepper to the pan with a dash of salt and the garlic. Continue cooking until the peppers are crisp-tender, you want then to still have a bite. Also, remove from the pan. 

Add the eggs to the pan and cook, stirring, until the eggs are about 75% cooked. Return the chopped sausage, cooked peppers, and chopped cheese slices to the pan and continue cooking until the eggs are cooked. 

Remove from the pan and top with the avocado. 

Serve.
