Low Carb BLT


 

Sometimes, you just need a BLT. And a wrap just isn't quite the same. So I used bread cheese is place of the bread and It was nice. 

For the bread cheese I cut the entire block in half on the angle and then got 4 thin slices out of it. This one wasn't very toasted and it definitely could have done with a bit more cooking. But overall, it was really nice.

For the tomatoes, I'm a snob. A love heirloom tomatoes with a tiny sprinkle of salt directly on the tomato. The mayo is completely unnecessary but adds to the iconic BLT flavor. 

Bread cheese slices
Cooked bacon strips 
Lettuce
Sliced tomatoes
Mayo and salt as desired 

Slice the block of cheese in half on the angle and toast completely on both sides. 

Add the lettuce and a tiny bit of mayo if using. Top with tomato and bacon and enjoy!
