Chicken Salad Stuffed Tomatoes



     Chicken salad has always been a favorite.  And tomatoes are a huge favorite as well, esp heirloom tomatoes. I remember the first time I had them combined, and served like this, and it was amazing! I loved it. 

I love to add vinegar and sugar to mayo-based dressings but didn't want to add the sugar this time. And I love vinegar, which means I have a large variety on hand. The white balsamic add a bit of balanced sweetness and a little fun flavor to the dressing. 

Chicken Salad Recipe
1 large heirloom tomato
1 chicken breast
1-2 tbsp. butter
All-purpose seasoning to taste
2 stalks celery, chopped
4 green onions, sliced
1/4 c. mayonnaise
1 tsp. strawberry basil white balsamic vinegar
Fresh cracked black pepper

Heat the butter in a skillet. Trim the chicken breast of fat and tendon and cut it in half lengthwise and season with the season all. Cook in the butter, cooking on both sides, until cooked all the way through. Remove from the heat and allow the chicken to cool. 

Shred and chop the chicken. Combine the mayonnaise, balsamic vinegar, and black pepper. Add the chicken, celery, and green onion. Stir to combine well. 

Cut the tomato in half lengthwise and sprinkle lightly with salt. Hollow out if desired and top with the chicken salad. 

Top with black pepper and more sliced green onions.
