Creamy Lemon Zoodles with Chicken
This one was to test out my new zoodler, which I really, really, like and to use up some cottage cheese I had on hand. I really didn't want this one to taste like Alfredo so I went with a light lemon sauce and it was more like a zucchini salad than a cooked pasta.
Lemon Cheese Zoodles
1 chicken breast, butterflied
2 Tbsp. butter
1 tsp. All-purpose seasoning
1 zucchini, run through a zoodler
1/2 c. cottage cheese
1/4 c. lemon juice
2 green onions, white parts only
black pepper
2 Tbsp. heavy cream
1/4 tsp. granulated garlic
Salt to taste
Asiago cheese
Place the cottage cheese, 2 tablespoons lemon juice, onions, black pepper, heavy cream, and garlic in the blender and process until smooth. Set aside
Heat the butter in a skillet. Season both sides of the chicken with all-purpose seasoning and sear in the butter. Remove from the skillet and while hot deglaze the pan with the remaining 2 tablespoons of lemon juice. Remove from the heat and add the cottage cheese mixture.
Place the zoodles in a bowl and top immediately with the warm cheese mixture. Top with sliced chicken and asiago cheese.
