Hamburger Stroganoff


     I've already talked before about being diagnosed with insulin resistance in 2023 and then spending a year haphazardly trying to eat properly and still reversing it. For me, and I'm not claiming any medical expertise here, reducing them while still utilizing some things, like this recipe has a powdered gravy packet, seems to work for me. I did the math, the packet has 2 grams of carbs per serving, and this recipe uses two servings of the powder bringing it up for a grand total of 4, so for me, that still works. 

   This recipe wins all the points for ease and speed of preparation, as well as deliciousness. None really for looking great, but that one doesn't always get pulled off. 

    For Worcestershire sauce I always use the Kroger store brand, it tastes like it's supposed to but they don't include the anchovies its supposed to have and it works with my fish allergy. 

Hamburger Stroganoff Recipe
1 lb. ground beef
1 brown gravy packet, unprepared
2 Tbsp. bacon renderings or butter
black pepper
1/2 c. sour cream
dash Worcestershire Sauce 
Zucchini zoodles 

Heat the fat in a pan. Once it's hot, add the ground beef on top, and leave it, without touching or crumbling it at all, until it's seared and golden on the bottom. 

Start breaking it up to cook evenly throughout. Once the meat is about 60% cooked, add the gravy packet and cook, mixing it in as it cooks. Once the beef is completely cooked, add the sour cream, black pepper, and Worcestershire sauce and simmer for a minute or too so it combines. 

Serve topped with zucchini zoodles.
