Cheesy Pork Bowl
This is the epitome of decadence. Even eating low card you can go for that bowl of rich, gooey, goodness. I like cauliflower, so that works for me to swap it out the pasta and still enjoy.
Cheesy Pork Bowl
1 head cauliflower
Drizzle of salt and olive oil
Carnitas, prepared
1/3 c. Heavy cream
10 oz. Velveeta (regular or queso Blanco)
Pickled red onions
Fresh parsley
Heat the oven to 450*F.
Chop the cauliflower into small florets and place in a glass baking dish. Drizzle with olive oil and sprinkle with salt. Roast at 450 until the cauliflower is tender. Remove the pan from the oven and add the heavy cream and velveeta. Return to the oven but turn the heat off. Leave for 5 minutes. Remove from the oven and stir to combine.
Serve topped with carnitas, pickled red onions, and fresh parsley.
