Ginger Pork Stir Fry


      I love recipes that are leftover makeovers and use up things we have around the house, in this case a pork loin I made too much of the night before. I love leftover beef on it's own, and chicken thrown in salads, but pork I like to stir fry. The ginger sauce and load of greens made for a very satisfying dinner. 

Ginger Pork Stir Fry with Greens 
1 pork loin, cooked and sliced
Bacon drippings
1 small onion, sliced
1 small head cabbage, sliced
1 bunch kale, sliced
1/4 c. soy sauce
2 Tbsp ginger paste
1 Tbsp. garlic paste
drizzle sesame oil
1/4 c. ketchup

Combine the soy sauce, ginger paste, garlic paste, sesame oil, and ketchup in a small bowl and set aside. 

Heat the bacon drippings in a large pan. Add the onions and leave until browned. Add the pork and cook, stirring infrequently, for about 3-4 minutes. 

Add the soy sauce mixture and stir to combine. Add the cabbage and kale and cook, stirring, until the vegetables are tender.
