East African Beef and Collards
This dish is based, very loosely, on an east African dish, Sukuma Wiki which means "stretch the week. It's a nicely flavored beef and collard curry dish that is nutritious and delicious. 1 (14 oz.) pkg. shaved beef 1 bunch collards palm oil 1/2 bell pepper, chopped 2 green onions 1-2 tomatoes, chopped 1 tsp. garlic paste 1/2 c. sour cream 1 tsp curry powder 1 tsp. lemon juice dash coriander Heat the palm oil in a large pan until smoking. Add the shaved beef, the curry powder, and the coriander. Stir to combine and cook, leave it at times to sear in spots. Once the beef is cooked add the lemon juice to reduce slightly. Add the bell peppers and tomatoes and cook for 1 minute before adding the chopped collard greens, garlic paste, and a cup of water. Cover and simmer for 15 minutes. Remove the lid and simmer until the liquid is reduced to almost nothing. Stir in the sour cream and heat through. Taste and adjust for salt and curry. Enjoy!
